I'd suggest you do some googling on the term "insulin resistance".

I'm also betting you don't have a car and walk or bike everywhere. ;-)

I'm not offended in the slightest and don't have any problems with
directness (in fact, I prefer it). However, your question was like,
say, going into a vegan newsgroup and asking "why so obsessed with not
eating or using animal products? I eat meat everyday!". It comes off
as a bit trollish and boorish, whether that was your intent or not.
    Just so you know.

I'd still recommend that you read the FAQ first (it's posted daily),
    -then- ask questions.

It is often claimed that 25% of people have no problems at all digesting
    carbohydrates in large quantities.

Similarly, 25% of the people are said to have great sensitivity to
ingenstion of carbohydrates turning into stored fat.

If you are one of the lucky 25% with no problems, then you can't
effectively understand why people are concerned with carbohydrates.

It is a mistake to think that everyone else is just like you.

To understand DIET, you need to look beyond yourself...... because there
are evidently large differences in how people respond to the same food,
    drink, or drugs.

  8. By the time the Italian girls are 40 years old, can you see any extra weight
    on them?

I don't know how old you are, but you referred to yourself as a "girl" -- so
that may have something to do with it. I also used to eat a lot of pasta
and other carbs. I even fell for the high-carb "diet" a few years ago when
I wanted to lose weight, and there were some diet books that recommended
low-fat high-carb diets for weight loss. It didn't work, of course! Much
more important to my health, I eventually was diagnosed with diabetes (a
little more than a year ago). This time, I did some research and also
talked to a number of friends with diabetes. I didn't go true low-carb, but
I did adopt the South Beach diet and (in addition) completely eliminated
pasta, rice, potatoes, and added sugar. The result is that I have lost a
substantial amount of weight without ever being hungry (lots and lots of
veggies, moderate amounts of fruit, some cheese and nuts, low-fat meat,
etc.) *and* my sugar is now under control. I have not had to take
medication for diabetes for several months, and my readings have been
consistently within the normal range (hovering around 100).

Addendum to my comments: I did experiment a bit when I first started to
reduce the amount of carbs in my diet. I found that my BG would spike if I
ate even a small amount of pasta or bread. So, I completely eliminated them
and the results have been good.

I'm reading... right now, but honestly I have a question ...this kind of
diet is it something that you follow for all of your life or only for losing
your weight? otherwise after you finished the diet what do you eat? I mean
you cancel carb from your diet forever?

The premise of most of the popular plans* is that one eliminates quite
a few carbohydrates in the beginning and gradually adds some back as
    one progresses.

    * Atkins, Protein Power, South Beach

It is also important to know that controlled carb (low carb) != no
    carbs at all.

For those that benefit from carb restriction, yes, it is something
that is best followed to some extent for the rest of one's life.

As to what I eat, the emphasis of my diet is lots of vegetables and
lean meats. I do pay some attention to fat intake (many here don't),
but am not obsessive about it. If I want a steak, I have a steak.
Most of the time though, I eat a lot of chicken, seafood, and turkey.

    Quoted message said:

I find this diet a little *unnatural* for the body, (for example you have to
take suplements I read "multivitamin and perhaps calcium" ..or other things
for have the fibre, if I'm not wrong) ... but of course is only
    my opinion!

It can cause an electrolyte imbalance in some.

    Quoted message said:

I understand that this kind of diet means to change the metabolism, is not
dangerous? or anyway a big stress for the body?

Not really. Calories still matter. It was/is rather unfortunate that
Atkins downplayed the importance of caloric restriction in his
    writings.

    Nice job, Mary.

I was also wondering how old the OP was. I had no problems with carbs,
either, until I hit 35 and had a baby, gaining a lot of weight and never
    getting it off.

Pasta, bread, rice, etc., etc., didn't seem to add to it after that, but
I wasn't losing it that way either. :-)

Well, Italy has the fastest growing rate of obesity and diabetes in Europe.
Likely not because of the Mediterranean diet, but because of the highly

I don't think so...otherwise all of this 25% are Italian people!
We usually eat pasta every day! And every country have hundreds of kinds
    of
bread!!! We are lover of bread! :-)

Well, Italy has the fastest growing rate of obesity and diabetes in

    Europe.

O__° What? I swear ...but when I go around I don't see no one with obesity
problem. One stupid example? if you want buy some clothes, the biggest size
that you can find, in normal shops, is 12 (Italian size is 46) If you have
    problem with your
size and you can't wear the 12 anymore... you have to go in shops for extra
size! And they are very rare shops! I think is a index of the size of the
    people! Right?

Likely not because of the Mediterranean diet, but because of the highly
processed carbs that come with the junk food/pizza diet.
