What I am thinking is, tomato sauce (or just sauce with a bit of tomato) may
be like orange juice in that, when it is freshly made, it has a less acidic
aspect.
If so, it might be worth making fresh.
I've generally just used Italian Dressing or Kraft Original BBQ sauce.
For home made, I'd probably use a mix of lemon (or vinegar), garlic, a
few herbs/spices and maybe a little chili powder. Chili powder would
give it the red color. Paprika works too.
I'd only use Tomato if I was making italian. It tends to scorch horribly.
Ever notice how any plastic cookware that you nuke with a tomato
ingredient utterly destroys the plastic?
Fruit juices are a good thing too, including pineapple juice.
Now is when I miss mom the most! She made a wonderful poultry marinade
and she never did write it down. :-(
