  1. Surprise Hot Sandwiches

    3/4 lb Cheddar cheese
    1 lb bologna
    2 sweet pickles
    1 tsp onion
    1/4 cup mild prepared mustard
    1/3 cup mayonnaise

    Grind cheese, bologna, pickles and onion together. Stir in mustard
    and mayonnaise. Scoop out inside of weiner buns. Fill with meat
    mixture. Wrap in aluminum foil and put on cookie sheet. Heat at 350
    degrees until hot through.

    This would be a delightful impromptu snack for unexpected company.

    there's lots and lots and lots of space available, and at least he
    posted a recipe. (here's another prize winning recipe)

    Spam Cupcakes*

    2 (12 oz) cans SPAM classic
    2 eggs, slightly beaten
    2/3 cup quick cooking oatmeal
    3/4 cup milk

    For the glaze:
    1/3 cup brown sugar
    1 tsp. prepared mustard
    2 Tbsp white vinegar
    1 Tbsp water
    4 cups prepared instant potatoes
    snipped chives for garnish

    Preheat oven to 350. For cupcakes: In large bowl, grate SPAM. Add eggs,
    oatmeal and milk; mix well. Lightly spray a regular size muffin tin with
    nonstick cooking spray. Fill each muffin tin 2/3 full with SPAM mixture.
    Using the back of a spoon, lightly press mixture into tins. In small
    bowl, whish together the brown sugar, mustard, vinegar and water.
    Lightly spoon glaze mixture over SPAM mixture. Bake for 25 to 30 minutes
    or until mixture is set. Meanwhile, prepare 4 cups of instant mashed
    potatoes. Remove cupcakes from oven. Place oven rack 2 to 3 inches from
    heat source and heat broiler. Top each cupcake with potatoes. Return
    muffin tin to oven and broil 2 to 3 minutes, or until potatoes are
    lightly browned. Garnish with fresh chives and serve. Serves 12.
    Tip: For best results, let cupcakes stand 5 minutes before removing from
    pan.

    I know, I don't understand the antagonism toward Jimmy. He posts
    recipes, doesn't engage in P****ing contests or wars. What more could
    you ask for. (I hate to admit it, but some of his stuff sounds good -
    after your mind-altering substance of choice, of course). I don't
    know, maybe it's time we opened up that "food snobbery" thread again.

    Let's start with recipes that he's _ACTUALLY_ _TRIED_ and move on from
    there. Anyone can batch a dozen recipes. You hit a website, sign-up on a
    group or mail-list, and then just copy-and-paste ad nauseum.

    The MAIN benefit from posting recipes that one has tried is from the
    modifications that appear (or the editorial commentary from said
    modifications.) It shows that the poster has an interest in food and not
    just seeing his or her nom de plume. Adding some commentary takes little
    effort and a minimal amount of time. It does create breakdowns in
    hit-and-run postings.

    Le move on: Most of Jimmy's recipes disguise textures and tastes through
    over-use of salt and fat-laden products. If you can only taste the salt
    or fat, then what's the point in loading it down with other bulk. If you
    wanna eat a jar of Crisco or chomp on a saltlick, then do it; don't hide
    it with a dozen items.

    I use items that are just as quick and more-easily controlled than many
    of the products in his "recipes." If that makes me a food-snob, then
    I'll happily accept that title. When someone like Jimmy posts his

    I also think Jimmy should consider submitting these to rec.food.recipes
    instead of here because he never sticks around for any discussion.
    R.F.R is better for that format as long as one doesn't mind waiting 3
    days for the messages to post.

    Here's another recipe. My mom makes this all the time:

    Blueberry Delight

    2 cups flour
    2 sticks margarine
    1 cup chopped nuts

    4 cups blueberries
    1 cup sugar
    1 cup water
    1/4 cup cornstarch

    1 (8 oz) package cream cheese
    1 can sweetened condensed milk
    1/2 cup lemon juice
    1 tsp vanilla

    Mix flour, margarine, and nuts. Press in bottom of pan, bake 20 to 25
    minutes at 325°, cool.

    Mix berries, water, sugar, and cornstarch in saucepan. Simmer, cool.

    Mix remaining ingredients in a bowl. Spread cheese mix on crust.
    Refrigerate. Top with chilled berry filling.

    think he should does not make you an expert, nor does it make you right.
