  1. I thought I should start a new post for this. It's in reference to my
comments about my built-in "carb-detector" and Dreamfields pastas.
You posted that you thought I don't have my normal reaction to an increase
in carbs because something about Dreamfields pastas delays the absorption
of the carbs. While that might be true for some people, I still think I'm
not getting any extra carbs from the pasts for reasons other than the lack
of bloating and lethargy. And you've already said that it does seem to be
    an individual thing. :-)
I'm in maintenance at 65g net carbs/day. I found that's my tolerable upper
limit before I start to gain weight. If I were absorbing extra carbs from
the Dreamfields pastas, I would expect to gain weight after having 1 1/2
cups of macaroni every day for lunch for an entire week. This didn't
happen. And I did gain weight when I tried to go to 70g net carbs for only
a few days (without the pasta).
Since you measure your BG, what carb count do you come up with for the
pastas? I understand that diabetics are able to calculate the amount of
net carbs ingested based on their BG readings. Just curious. :-)

Oh, definitely. I wasn't saying that your interpretation was
necessarily wrong at all, just that it could *possibly* be wrong and you
(generic you) might not have the usual bad effects.

No, we can't calculate the number of carbs with a meter, just the
impact, or GL of the meal we had. In my case, I get a reading that's
normal, but a little tiny bit high at two hours of 112-120. By 4 hours
I'm up in the 140-150 range and stay there for at least a few hours
unless I walk it off, though even then it will creep back up.

After my LC meals, I'm not happy with anything much above 100-110 at two
hours, and I'm often even lower.

Lots of folks have reported 2 hour highs, too, and many of us have the
    delayed, long increase.

I can't compare the reaction to a similar amount of regular pasta
because I don't ever eat it.

Since you know what your CCL is, and you have no gain, it's probably not
a problem at all for you, you're probably not digesting it.

Do you count the Dreamfields carbs from the nutrition panel or from what
they say is the 'effective' carbs? I think whatever the process they use
is, it must only work for some people. I digest it pretty much like other
carbs except a little later. My BG went up just as much and stayed up a
little longer than the same amount of regular macaroni. I only tried it
twice, I probably should have done it a few times more to be sure but it
made me hungry. BG meters aren't really so accurate and other factors go
into it so even eating the exact same sequence of foods on 2 different days
    can turn out different BGs.

My reaction to the Dreamfields was intermediate: my 3 hour reading was
the same as my 2 hour reading (c. 130, if I remember correctly). By 4
hours, it was going down (120?), and I didn't measure further, as it was
bedtime. The next night, I had the same meal (lots of left over
chicken), with cauliflower instead of the Dreamfields, and two small
Swedish ginger cookies for dessert. The cookies were made with flour and
sugar, among other ingredients, and the total carb count was very
similar to the "available carb" count of the Dreamfields. That meal
raised my blood sugar from 96 to 110 at one hour post prandial; by 2
hours, it was pretty much back to baseline.

So, I didn't do a comparison based on the pasta, but my comparison based
on ostensible carb count showed that there's something extra going on.

  5. I count it as what they say for the "digestible carbs" which is 5g/serving.
I'm not diabetic so I wonder if that might be the difference? I don't
think we've heard from any non-diabetics saying it caused them weight-gain,
etc., or have we and I missed the posts?

  6. I've tried the Dreamfields pasta with out any ill effects. I must admit I
was very careful to only eat 2 oz and only eat it 1 time a week.

I was up 1 pound the next day but due to the fiber. Since it tastes just
like regular pasta, I'm going to start feeding it to the rest of the family
when the regular pasta is gone.

Barilla pasta even has flax seed in their whole wheat pasta ( many more
carbs) - one day I hope to be able to try that one out too. Mueller's was
good, but I was careful to keep my portion low also.

  7. I had occasion to 'test' some Dreamfields recently. Like Bev-Ann, I enjoy
it because I don't get the bloated/lethargy feeling that I do from regular
    pasta.

If I have one serving, ~136grams cooked, I feel fine and the BG is a
slower/later reaction, but not too high (testing every 1/2 half hour.) Now
I have to qualify and say I used Penne and it was part of a recipe that
included Trader Joe's Palak Paneer and 4-ozs of extra firm Tofu. :-)

A couple of nights ago, I made a different recipe using leftover Penne and
Carb Options Pasta sauce w/Sausage. I thought I head measured out 1 serving
in the container, but it was actually two. In this case I did feel bloated
and had a very high reaction, 214. But was back down in about 3 hours.

Last night I had 1-serving topped with Trader Joes Tuna in Yellow Curry
sauce, (with the potatoes picked out.) That was much better.

There's a couple of factors I wonder about; (1) I think I may have slightly
overcooked the pasta to begin with, and (2) How the properties of the cooked
pasta might break-down over time, say, after 4-5 days.

Using Broccoli or cauliflower as a base sounds good too! :-)

  8. I always overcook mine because I live at a higher altitude and it takes at
least 13 minutes to get it to al dente. Because of this, I emailed them
when I first started using their pasta and they said it won't change the
digestible carbs but would affect the texture just like any other pasta.
And the week where I ate mac & cheese for lunch every day, I made the
entire batch on Sunday and ate from that all week so the last portion had
been in the fridge for 7 days. Didn't seem to make any difference.
