Making it up as I go along, with a recipe from Mr.
Food open.
Red bell pepper - about 1/2 of one onion - 1 medium, halved
longitudinally, then sliced about 1/4" mushrooms - the
better part of a half pound box, sliced garlic - 3 cloves,
sliced olive oil for frying 2 chicken thighs, 2 chicken
drums 16 oz can Red Gold brand petite diced tomatoes ~ 8 oz
tomato sauce a leetle sugar fresh ground black pepper,
dried basil, dried oregano a nice glug of Rob's Rosemount
Estates Shiraz
Olive oil in my 3 qt All-Clad Sauté pan, the onion,
mushrooms, garlic, and pepper sauteed for about 4-5 minutes.
Those then removed to a bowl and some butter added to the
pan. Browned the chicken in it, added back the veggies,
poured over the tomato products, the rest of the stuff, and
the red wine. It simmers as we speak.
