3) I consume about 2500 calories/day, what would be considered a low (or low/medium) carb. diet in
terms of calories or grams?

Often times, high triglycerides are a marker for Type 2 diabetes.
You have excellent (low) triglycerides, an excellent BMI, and an excellent exercise history.
Therefore, you have no "markers" for Type 2 diabetes.
You may have a marker for approaching adult-onset T1 diabetes.
You can do nothing to prevent adult-onset T1 diabetes. That is, nothing "reasonable" There's a
possibility that taking immuno-suppresive meds for the rest of your life might keep T1 at bay
but the docs aren't all that interested in a treatment that dangerous to prevent a disease which
isn't very dangerous if controlled. For a while they thought that preventative daily insulin
shots might help (the DPT-1 clinical trials), but it proved not to help. Daily insulin shot(s)
may prevent the onset of Type 2 diabetes.
Speaking as an adult-onset T1, my advice is to:
a. Keep up the exercise. A strong exercise program is fantastically useful to adult-onset T1, or
any diabetic.
b. Keep building muscle-mass. High muscle mass is fantastically useful to adult-onset T1 or
any diabetic.
I speak from direct experience. Both help you control blood sugars very, very, well.
You are very interested in your blood sugar at one or two hours after a high (30 -70 + gram) carb
meal as a marker of approaching adult-onset T1 diabetes. There are some cheap, quality blood glucose
(bG) meters on the market. The Wal-Mart Relion is one.
The LifeScan Ultra and Accu-Chek Advantage are excellent brand name meters which can be purchased
moderately cheaply via rebate offers or combo strip+meter deals, and their testing strips aren't too
expensive if you buy them vial mail order from Hocks
