Gotta Have Sole
1/2 pound fillet of sole
2 tablespoons parsley, chopped
Water (as needed)
1 tablespoon butter
1 tablespoon all-purpose flour
1/2 cup milk
1/4 cup shredded cheddar cheese
2 tablespoons chopped liver
1/2 teaspoon salt
2/3 cup cooked rice
Place sole in a small, greased baking dish. Sprinkle with parsley. Add
enough water to just cover the bottom of the dish. Bake in a preheated 450F
(230C) oven for 10 minutes. Cool then and shred with a fork.
Melt butter in a small saucepan. Stir in flour and heat until bubbly.
Gradually stir in milk and simmer, stirring constantly, until mixture
thickens. Remove from heat and add cheese, liver, and salt, stirring until
cheese has melted.
Add the flaked fish and rice to cheese sauce and stir well. Let cool.
Store in an airtight container in the refrigerator.

Actually, Persia *thinks* she wants what I'm eating but she doesn't really
want it. Except for cornbread. She adores cornbread. She'll steal a piece
of cornbread like a, um, cat burglar LOL But she's on a prescription diet
since surgery in 2004 and it doesn't include a recipe such as I posted!
Just saying. Besides, if I could afford good (Dover) sole, I certainly
wouldn't give it to my cat! I've made sole piccata once... the inexpensive
but not less tasty version is chicken picatta.

I seriously doubt you've ever eaten sole, dover or otherwise... unless
frozen, which I also doubt, and why would anyone want frozen sole if
they could have fresh flounder. There is no sole in the US, it's a
European fish. In the US what's called sole is actually flounder...
even though dover sole is listed on restaurant menus they actually
serve flounder, and even then unless you live fairly close to the
seashore you are getting frozen. Even many seafood restaurants right
on the shore serve frozen unless it's touted as catch of the day, and
even then many lie. Most folks in the US have never eaten fresh
seafood.

The popularity of sole dates back at least to the ancient Romans, who
called it solea Jovi (Jupiter's sandal), undoubtedly because of the
elongated-oval shape of this FLATFISH. Though a number of FLOUNDER
family members (such as Petrale sole, lemon sole, rex sole and butter
sole) are incorrectly called sole in the United States, the highly
prized true sole is found only in European waters. The best-known of
these is the Dover sole (also called Channel sole ), which is found in
coastal waters from Denmark to the Mediterranean Sea. The body of the
Dover sole averages about a foot long and ranges in color from pale
gray to dark brown on the top side, with the underside a pale beige.
Its delicately flavored flesh has a fine, firm texture. True Dover
sole is imported frozen to the United States from several of the
northern European countries and is available in better fish markets.
Other true sole include the thickback and the sand (or partridge )
sole, both smaller and less flavorful than the Dover. Much of what is
sold as Dover sole in the United States is actually flounder. Sole can
be prepared in a variety of ways including poaching, steaming, baking,
broiling and saut�ing. It's ideally suited for combining with other
foods and sauces.

I have one begging chow hound who will beg for anything but leave
half it her successful items on the floor. The other, Gracie is like your
yogurt eater--but she wants anything dairy, cottage cheese, ranch
dressing, yogurt, ice cream. It's hilarious, that little inquisitive face
keeps popping up until I give her the bowl. Then of course she
bathes for 20 minutes. 🙂

marinated. I try Nutro... no luck.

flounder or otherwise, in west Tennessee. We don't even eat fresh catfish.

practically the days of Samuel Clemens (Mark Twain); it's far too polluted.

Of course, one can also check the fishing regulations for the Atlantic
states to know whether it's even possible to be getting flounder from those
waters at a given time of year.

All five of ours regularly eat Nutro-Max dry food. (We free feed the dry
food.) As far as canned, which they get for dinner, four them will only
eat Fancy Feast Chunky Turkey. Popie will only eat Fancy Feast Trout.
And people (non cat owners) say all cats are the same. :-)
Only Mr. Bailey comes to me first thing in the morning and first thing when
I get home and "talks" to me, asking for some Whisker Lickin's Tender
Morsels. He prefers Chicken and Cheese.

Yep, there are definitely catfish farms. But I've never seen any in my
area. I've seen plenty in Mississsippi and Arkansas. But even catfish
arrives at the grocery store here flash-frozen. Restaurants might have them
brought in fresh from the farm, I honestly don't know. I should pull a
Gordon Ramsay the next time I order catfish (which is rare) and ask if it's
fresh or frozen. Then I can watch the server stammer and hem and haw,
because they usually don't know LOL

Mine will only eat Fancy Feast and it has to be grilled, not flaked
not marinated. I try Nutro... no luck.Michael
I sincerely hope none of yours ever has to eat prescription food any time
soon, Michael. Not only because it would mean a health issue but also
because they may not like it.
After Persia's bladder surgery in 2004 they told me she could only eat
Hill's x/d (to prevent crystalline oxolate formations). She was used to
Iam's (which she really just thought was so-so) and a can Fancy Feast once a
week. Thank Bast she loves that x/d! I tried her on the canned x/d formula
but she wasn't very keen about it. Maybe that's because she was used to FF.
I don't really know; should try some with her again. But she *adores* the
dry stuff! She begs for it. Whew!
I *did* give her a can of FF on Thanksgiving day. Her first can of the
stuff since April, 2004. She sucked it up like a furry vacuum cleaner! LOL
It's to be a once or twice a year treat.
