    monsters would be in large horse tanks with aerated water, being fed a
    diet of cornmeal. This would purge the beasts of most any gunk,
    catfish are real bottom - feeders and were so considered a "dirty"
    fish, they had a stigma of being "poor food". They could be pretty
    rank if the didn't undergo this purging process...

    Sturgeon underwent this process too, those suckers can get BIG...and
    once in a while the fishermen would bring in a FUGLI garfish as an
    "oddity", pretty scary.

    Now catfish is considered a "white meat", and aside from stores that
    cater to a largely black clientele, it's almost as expensive as other
    "respectable" fish...at least in Chicawgo.

    One of my fave meals is catfish nuggets stir - fried with veg 'n Asian
    stuff; catfish is always on the menu at the Viet and Thai places I
    frequent. At those places it's primarily bone - in, no wussy
    filets...

    Gotta Have Sole

    1/2 pound fillet of sole

    Gradually stir in milk and simmer, stirring constantly, until mixture
    thickens. Remove from heat and add cheese, liver, and salt, stirring until
    cheese has melted.

    Add the flaked fish and rice to cheese sauce and stir well. Let cool.
    Store in an airtight container in the refrigerator.

    My cat's better not see this, I draw the cooking for cats line at
    grinding raw chicken with extra hearts, livers & gizzards. My kitty
    boys love ground chicken, I was feeding it chopped but the kitten took
    to dragging his under the kitchen table. Ground it stays off from my
    floors. An aside, raw food is a relatively new addition here and I am
    getting a kick out of supermarket cashier reaction to packages of
    "chicken guts."

    I'm sure there are other uses for chicken livers and gizzards than feeding
    cats 🙂 My former fiance loved breaded deep fried chicken livers. It was a
    southern thing, I guess (and also a grew up *poor* thing). I remember Ray
    being besotted with this one place that had fried chicken livers on the
    menu. It grossed me out, but hey, no skin off my nose if he wanted to order
    them. I can't recall what I ordered but it was probably some innocuous
    pasta 😉

    What did I tell you? Cats make people write this stuff. Some of the

    frozen, which I also doubt, and why would anyone want frozen sole if

    the suppliers often substituted frozen flounder for sole. Told us 'boobus
    americanus' would never know the difference. When I was shipped flounder
    however, I put it out as flounder, not 'sole'.

    LOL. Catfish nuggets. When FBS was in tech for culinary he convinced his
    younger brother (who was maybe 10 at the time) that catfish nuggets were

    The public is getting misled. Flounder is a good fish, so why not call
    it by its real name?
