  1. Fried up some turkey sausages, steamed two heads of broccoli, and put a
    big handful of pasta on to boil. Then I realized I was out of marinara.
    So I started pulling things out of the fridge:

    1/4 cup heavy cream (more would be good)
    ~3 oz cream cheese
    dash garlic powder
    tablespoon basil pesto
    handful of chopped dried tomatoes (in the pasta water for the last minute)
    1/4 cup finely shredded stravecchio cheese (parmesan would work, too)

    Made a nice rich cream sauce with good flavor (the pesto and tomatoes
    from last summer's garden really popped). I'll be trying that again.

  2. We had a fish curry, made with Trader Joe's yellow Thai curry sauce,
    chunks of spade (from the freezer, caught by the BF's dad last summer),
    waterchestnuts, bamboo shoots, baby corn, onion, and green peppers,
    topped with chopped salted peanuts and cilantro.

    Next to it was supposed to be TJs Vegetable Pad Thai - imagine my
    surprise when I discovered the sauce had chicken in it! So, no pad
    thai. Rice noodles saved for later.

    Instead, I improvised a coconut rice. I sauteed some onion, added fresh
    garlic and ginger, then some cumin seed. Added brown rice and toasted
    it for a minute. Then, to my 1 c rice, I stirred in 1/4 c or so of
    flaked sweetened coconut, covered, and cooked for an hour. It was
    really good!

    Alongside, we had a fruit salad of mango, canned pineapple, mandarin
    ornages, and bananas, sprinkled with lime juice.

    Yum!

    Yum indeed! Is the Pad Thai *supposed* to have chicken, or was it a
    packaging error?

    By comparison, it's a night for shortcuts here at Bob's Villa:

    I've got a carton of Safeway's "Tuscan Tomato Basil" soup. I'll open it and
    heat it up. I'll cut little rounds from a baguette, top them with a tiny
    bit of Parmesan, and put them in the toaster oven. A few minutes before we
    eat (which will be God-knows-when, since I'm waiting for some of them to
    arrive from God-knows-where) I'll toast them and then float them on the
    soup.

    I've also got a Boboli which I'm going to spread with steamed spinach, then
    with a mixture of ricotta, eggs, and a tiny bit of nutmeg. Then I'm going to
    sprinkle on mozzarella and Parmesan. I'll cook it at 325 or so until the
    cheese starts to brown (which ought to be long enough for the eggs to
    thicken the ricotta as well). For those unfamiliar with Boboli, go here:

    While the Boboli is cooking, I'll pan-fry a few steaks (there are three or
    four of us for dinner tonight). When they're done and resting, I'll put a
    big dollop of (pre-made) pesto on each, and then I'll cook some mushrooms in
    the pan juices to accompany them. If I get *real* ambitious I'll make some
    polenta.

  4. You're more adventurous than I am tonight...for us it's baked chicken
    thighs sprinkled with some lemon pepper, sauteed baby squash, and a
    simple green salad with a lemon vinagrette. Yours sounds way better...

    cut into cubes, mayonnaise (not cut into cubes) and a little onion
    powder, all mixed together. Crash is having his on bread. I decided
    to toss caution to the wind and enjoy mine in sandwich form, too. I'll
    start being a good diabetic again tomorrow.

    I still feel like something is missing from the above. Suggestions
    are welcome. No celery. Crash's tastebuds don't like it.

    Anything would have been better than my nutrition today -- a shopping day
    never is good.

    Breakfast around 10am
    Fried plantains in coconut oil; black beans with jalapenos, pomogrante
    juice, 5 grain bread & tea.
    Snack around 1:30 am
    Banana, raisins, pecans, English walnuts
    Another snack: around 6 pm - still have some shopping to do
    Stonecold Creamery Coffee Ice cream -- Awful
    Too tired at 8:00 pm. to fix dinner -- left over of a piece of chicken and
    heated up celery and carrots
    Another snack with a movie:
    Ghiradelli chocolate

    Feeling guilty for not taking a cheese sandwich with me for a better lunch.
    I hate eating this way.

    Good question. I'm usually a vigilant label-reader, but TJs has so many
    vegi products that I got lazy when I saw the large word VEGETABLE PAD
    THAI on the front. It did not occur to me to read the ingredients. Next
    to it was a package of CHICKEN PAD THAI, so it's odd. I've had plenty
    of vegi tofu pad thai at restaurants, so I don't THINK it's supposed to
    have chicken!!

    Sounds like a nice way to jazz it up. I love tomato soup.

    OK, you got me there. I would probably do a huge salad alongside to
    round out the meal, with lots of lettuces, veggies, cheeses, and nuts.
    Ranch dressing. Maybe mix the pesto into the dressing.

    Something crunchy in the mix. Red pepper, diced? Waterchestnuts? Or
    maybe a little fresh parsley for color?

    Shredded cabbage on the sandwiches for crunch?

  14. I had yet another try at an experimental recipe for making spicy
    oven-fried chicken crusted with bran. It was OK, but I overdid the hot
    paprika. I could get the same heat using cayenne without the slight
    bitterness of so much paprika. It was OK. The bran works well, but
    needs spraying with olive oil to brown, which is why the second try.
    First try tasted good and looked pallid.
    I then ate half a pineapple. I didn't mean to, but it was superb. How
    happy I am that we don't actually have to cleave to the 500 mile diet!

    Honestly, that would be *my* preference too. I only eat steak once or twice
    a year, but my guests like steak a lot, and one of them is borderline
    anemic/anorexic, so I made it more for them than for myself. I did eat a
    piece of steak (maybe three ounces), but that was mainly because I enjoy my
    own cooking. :-)

    I still have some steaks in the fridge, but since I've still got guests in
    the house I'm sure they'll get consumed in the next day or two.

  16. We've had a house full of family for the last several nights. It was
    fun -- my grandma and two of my aunts got to see my boys for the first
    time and my mom got to see the grandma and aunts for the first time in
    about twenty years. My big brother and sister-in-law visited for two
    days, as well. I tried to take advantage of leftover / plan ahead
    cooking.

    Wednesday: lasagna, green salad, garlic bread
    Thursday: grilled pork loin, fruit salad, the rest of the garlic
    bread
    Friday: carnitas made with leftover pork, tortillas, onions, peppers,
    salsa, sour cream, rice
    Saturday: grilled cheeseburgers, grilled corn on the cob, baked
    beans, potato salad
    Sunday: beer butt chicken (was going to do this along with Saturday's
    burgers, but the fire was not hot enough), tomato, cucumber, and corn
    salad, Texas toast, baked beans, potato salad
    Monday: burritoes made with the rest of Sunday's chicken and Friday's
    rice, cheese, salsa, cucumber salad, peach cobbler

    Dunno. All I know is that I've ordered it off the 'vegetarian" section
    at 3 different Thai places I can think of (Albuquerque NM ,Virginia
    Beach VA, and Greenwich CT), and they verify that it's vegetarian every
    time. So I believed them. I've never made it at home, never thought of
    fish sauce being in it, just thought if it was offered several places
    as a veggie dish, it was most likely a veggie dish!!

    Next time I'm at a Thai place, I'll have to ask. I'm pretty sure all
    the places I go to have vegetarian options too. A quick perusual on
    the net shows most veggie thai recipes replace fish sauce with soy
    sauce. Probably not a bad substitute. They each have about 1g of
    sodium per TBSP. ;-)
