Dinner Tonight

  1. Last night I roasted a chicken to use the meat tonight in individual
    chicken pot pies. I made double shortcrust pastries. The filling was bite
    size chunks of chicken, peas, carrots, celery, green beans, and bits of
    potato. The gravy was made with chicken stock, half & half, well-flavored
    with asiago cheese.

    Dessert was French vanilla ice cream with a hot mincemeat sauce.

    We didn't have salad.

    Sounds like a lot of initiative on your part for a middle of the week
    dinner - you did well!
    On my part, I had about 24 hot Italian sausages to cook (outside) and
    package in 3's for freezing.

    So dinner was:

    Freshened up leftover soup of kale,onion,carrots,potatoes.

    Small (angelhair) spaghetti with left-over frozen pesto and hot Italian
    sausages.

    Ruffino (the Soprano's table wine ;-)) ) So-so.

    dinner - you did well!

    Since I split up the roasting of the chicken and the assembly of the pies
    over two evenings, it was pretty easy. I also made my shortcrust the night
    before and held it in the fridge.

    I LOVE Italian sausages. Never thought to cook them up in advance and
    freeze. What a great idea!
