I just posted a recipe for the best I ever ate in the budget stretching
thread. I had eaten them in Paris and they were so good that I worked
on copying them for a month before they finally came out right.
Everybody likes them, even the Italians who normally shy away from any
exaggerated flavor, and these are really exaggerated.

Pasta, Lentil and Pepperoni Soup
I cup (6/2 oz/200 g) red lentils
4 cups (32 fl oz/1 liter) chicken stock (page 22) or vegetable stock (page I
8)
I bay leaf
I tablespoon olive oil
I large onion, finely chopped
I can (14 oz/440 g) tomatoes, roughly chopped, juice reserved
8 oz (250 g) ditalini (small pasta tubes) or similar short pasta
6'/2 oz (200 g) pepperoni, thinly sliced
Place the lentils, chicken stock, and bay leaf in a large saucepan. Bring to
a boil, reduce heat, and simmer for 1-1 1/4 hours, until the lentils are
very soft. In small batches, blend or process the soup until smooth. Return
the puree to the pan. Heat the oil in a frying pan and sauté the onion until
soft. Add to the soup along with the tomatoes and simmer gently for 15
minutes. Cook the pasta in boiling salted water until al dente. Drain and
stir into the soup together with
the pepperoni. Heat until all ingredients are thoroughly warmed through,
ladle into warmed soup bowls, and serve immediately. . Serves 6

This isn't a recipe, just an idea. I have a few types of lentils in my
kitchen, but I usually use the French green lentils. They are very
tiny and so they cook quickly. I can make a combo of brown rice and
lentils and they are done at the same time. Or if I'm making vegie
soup, I just put the green lentils in at the beginning, and they're
finished with the soup. I don't have to simmer the lentils for a while
first. This is big advantage to me when I'm making dinner after coming
home from work.

Treat like split peas.
They go well with hambone stock, smoked hocks, bacon etc. with a little
sliced carrots and your choice of herbs/spices/flavorings.
One very fond memory...
Mom had made a pot of lentils and some mashed potatoes. We were moving
so mom could not cook. She mixed the lentils and mashed potatoes. I
remember it being totally wonderful! IIRC I was about 3. ;-)

Ingredients
4 cups water
1 cup masur dahl (red lentils) or mung dahl (yellow lentils)
2 tomatoes, cut into large chunks
5-6 large okra, halved lengthways
2 carrots, cut into large chunks
2 potatoes, cut into large chunks
1 tablespoon tumeric
2 teaspoons salt
2 teaspoons tamarind paste or 1 tablespoon lemon juice
1 tablespoon vegetable oil
1 tablespoon cilantro seeds, ground
1 teaspoon cumin seeds, ground
1 tablespoon black mustard seeds
1-2 jalapeno peppers, seeded and chopped
6-8 dried curry leaves
1 tablespoon sambhar masala
Preparation
In a large saucepan bring the water to a boil.
Add the dahl, tomatoes, okra, carrots, potatoes, tumeric, salt and
tamarind paste or lemon juice.
Stir and bring back to a boil. Reduce the heat slightly and cook until
the dahl is tender--approximately 30 minutes; add more water if
necessary.
Meanwhile, in a heavy skillet, heat the oil and lightly fry the ground
cilantro and cumin over a medium heat. Add the mustard seeds, chile and
curry leaves and fry for 2 minutes, covering the skillet as the seeds
pop. Add the fried spices to the cooked dahl and vegetables. Add the
sambhar masala and mix well.
The stew can be prepared up to 2 hours in advance.

Green Lentil Salad
1 pound (500 g) imported French lentils (about 2 1/2 cups) (or
substitute brown lentils)
1 medium onion, halved and stuck with 2 cloves
1 clove garlic, peeled
1 imported bay leaf
1/4 cup (6 cl) best-quality red wine vinegar
2 tablespoons extra-virgin olive oil
Salt and freshly ground pepper
1. Rinse the lentils and pick over carefully, discarding any pebbles
you may find. Place the lentils, onion, garlic and bay leaf in a heavy
medium sized saucepan; cover with cold water by 1 inch (2.5 cm). Cover
and bring just to a boil over medium heat. Reduce the heat to low and
simmer, covered, until the lentils are tender but still intact, 25 to 35
minutes. Check the lentils 2 or 3 times during cooking; during most of
the cooking water should be visible when you tilt the pan slightly. Add
the water as needed, but not more than 1/4 cup (6 cl). By the end of
the cooking time, the liquid should have been absorbed.
2. When the lentils are cooked, remove the pan from the heat; discard
the onion, garlic and bay leaf. Whisk together the vinegar, oil and
salt to taste in a small bowl. Pour over the warm lentils and toss to
coat. Transfer the lentils to a serving bowl. Just before serving,
season to taste with pepper and additional salt if necessary. Serve
warm.
Yield: 6 to 8 servings

A simple Indian-style daal recipe:
1 cup of red lentils
1 pint of water
1 vegetable stock cube
Bring to the boil, and simmer for 15-20 minutes till lentils are
softened.
Reserve.
1 medium onion, skinned and chopped
1 green chilli, seeded and chopped
1 tsp cumin seeds
a little salt and .5 tsp of turmeric.
3 tablespoons vegetable oil
Heat the oil in a fairly deep pan (wok or karhai are good)
drop a few cumin seeds in - when they pop, add the rest of the seeds.
When the seeds pop or change colour, tip in the chopped onion, and fry
until softened, then add the chilli. Fry for a couple of minutes, then
mix in the turmeric and salt.
Add the cooked lentils, and simmer, stirring from time to time.
Serve with plain basmati rice. I do this all the time...

are playing devil's advocate here and that it just did not go right
over your head.
Further, a lot of these sites are full of company generated recipes
you can get off their websites. They have their employees/pr staff
load them up so gullible people like you will assume that5 it was an
actual personal recommendation.
So, back to the drawing board for you - unless you do have a specific
recommendation, and your postings tell me you are as dry as the Mojave
Desert when it comes to a personal recommendation for a lentil recipe.

BTW, want another parallel? You probably have seen some newspaper's or
other media's compiled list of the Best Restaurants by different
categories. Most restaurants actively encourage their employees to
vote for them and to get as many of their family and friends as
possible to vote for them.
Happens all the time. Easy to see when your eyes are open.
