All the so-called clone recipes call for the sugar/peanuts/water mixed to be cooked until dry. I did that, following the recipe above. But it wasn't what I remember. The coating crystallized, like fudge that was stirred. The result wasn't a crunchy candy coating, but a crystallized sugary thing. It was good, as far as it went, but not what I was looking for. Was it because I stirred the mixture too much? Should I have just left it to cook itself dry, without stirring?

Has it ever crossed your pea-brain that not every participant in this discussion group lives in the US? I, for one, left the US some 15 years ago. I have to make do with what's available in my country of choice.

Stirring is not necessary while it's boiling but I don't see why it would matter. If you try this recipe again, add 1/4 cup or so of maple syrup to the mixture. That might move it closer to the candy coating you remember. -aem

I think I agree. What you describe is not the way I remember Beer Nuts. I recall beer nuts as having a sweet/salty, thin, non-lumpy coating. The red bumpy ones were burnt peanuts.

Well, yet again I've learnt something new from RFC. You can buy something called "beer nuts" here (NSW, Australia), but they don't have any sort of coating on them. They're just roasted, salted peanuts still in their red skins.
A candy coated beer nut sounds odd to me <g> as I wouldn't usually think of something sweet as going with beer. Or is the candy coating not very sweet? Are they actually meant to be eaten with beer?
