My inlaws are coming over for Easter. I'm trying to think of something
really good... multi-part meal to make. Since we're not sure of the exact
time they're coming, and it could actually vary as much as 2 hours... things
I can do most of the preparation ahead of time would be best. They think
I'm a really really good cook (well, I'm certainly not bad) and they're
always so happy to eat over here, but they don't come that often because of
the drive. Last time they came I made salmon but I tried it a new way and I
was disappointed - they still liked it but it wasn't the same response I
normally get, and hubby was quite disappointed because normally my salmon is
awesome.
So I'm thinking of steady standbys that are always good...I could make...
devilled eggs
Salad (w/ spinach & variety of other veggies & homemade dressing)
Stuffed chicken breasts
pecan crust cheesecake
I've only made the stuffed chicken breasts once before. It's a lot more of
a pain than the things I normally cook. But this IS easter. And they don't
really eat ham... so just trying to come up with an extra special meal.
They are not low carb, and they don't know that I am... even though I have
been for more than a year... We will probably have some whole wheat bread
in the house.
So any tips or changes or ideas anybody has would be appreciated. I've made
all of these things at least once before. The cheesecake recipe I have (I
believe it's Myra's?) is fantastic, I've made it twice before and it's very
loved.
I just found out tonight that they're coming, so I'm thinking of all the
things I'd like to do around the house between now and then and wondering if
housecleaning counts in place of exercise for an entire week? 🙂 I doubt
it, that would be too easy. If housecleaning gave me a workout then I
wouldn't have to keep postponing cleaning stuff in order to exercise. How
do people have enough time in the day to keep a house clean and work full
time and cook food and exercise? I don't get that part. If I lived by
myself I wouldn't have difficulty keeping a clean house because it would
just be me, and that's easy... but I wouldn't be nearly as happy, either...
so I guess I'll take the cluttered & somewhat messy house instead.
