Easter Meal ideas?

  1. My inlaws are coming over for Easter. I'm trying to think of something
    really good... multi-part meal to make. Since we're not sure of the exact
    time they're coming, and it could actually vary as much as 2 hours... things
    I can do most of the preparation ahead of time would be best. They think
    I'm a really really good cook (well, I'm certainly not bad) and they're
    always so happy to eat over here, but they don't come that often because of
    the drive. Last time they came I made salmon but I tried it a new way and I
    was disappointed - they still liked it but it wasn't the same response I
    normally get, and hubby was quite disappointed because normally my salmon is
    awesome.

    So I'm thinking of steady standbys that are always good...I could make...
    devilled eggs
    Salad (w/ spinach & variety of other veggies & homemade dressing)
    Stuffed chicken breasts
    pecan crust cheesecake

    I've only made the stuffed chicken breasts once before. It's a lot more of
    a pain than the things I normally cook. But this IS easter. And they don't
    really eat ham... so just trying to come up with an extra special meal.
    They are not low carb, and they don't know that I am... even though I have
    been for more than a year... We will probably have some whole wheat bread
    in the house.

    So any tips or changes or ideas anybody has would be appreciated. I've made
    all of these things at least once before. The cheesecake recipe I have (I
    believe it's Myra's?) is fantastic, I've made it twice before and it's very
    loved.

    I just found out tonight that they're coming, so I'm thinking of all the
    things I'd like to do around the house between now and then and wondering if
    housecleaning counts in place of exercise for an entire week? 🙂 I doubt
    it, that would be too easy. If housecleaning gave me a workout then I
    wouldn't have to keep postponing cleaning stuff in order to exercise. How
    do people have enough time in the day to keep a house clean and work full
    time and cook food and exercise? I don't get that part. If I lived by
    myself I wouldn't have difficulty keeping a clean house because it would
    just be me, and that's easy... but I wouldn't be nearly as happy, either...
    so I guess I'll take the cluttered & somewhat messy house instead.

  2. Thyme stuffed olive oil and herb rubbed cornish game hens, Asparagus
    sauted in garlic, kosher salt, Mrs Dash tomato basil and garlic
    seasoning, butter and olive oil, cauliflower fauxtatoes with bacon bits
    added, and Myra's Cheese cake( with 2 tablespoons of semi sweet mini
    choc chips added to batter before baking) for desert. Drink can be
    Ocean Spray low carb cran-rasperry juice mixed with diet &-up 1 part
    juice and 3 parts soda.

    Hi Spring!

    I tried to offer suggestions that were timesavers, but still elegant.
    You can't go wrong with a nice roast! It's easy, yet makes for an
    impressive table. The macaroons and fauxtato casserole could be
    prepared ahead of time and even frozen. Make the salad the night
    before, leaving the scampi, asparagus and roast beef and horseradish
    sauce for the day of the event.

    BTW, the horseradish sauce is to die for!

    Appetizer:
    Shrimp Scampi (make yourself or buy frozen from Sam's)

    Entree:
    Roast Beef with Horseradish Sauce
    1/2 c. whipped heavy cream, 1 T. horseradish, pinch of salt)

    Sides:
    Fauxtato Casserole (fauxtatos topped with cheese & bacon)
    Steamed Asparagus in Lemon Butter
    Mixed Spring Salad with Toasted Almonds & Strawberries

    Dessert:
    Myra's Coconut-Almond Macaroons (everyone loves cookies and coconut
    seems so Easterish)

    As a Jew who spends easter with my husbands catholic tribe, I'm shocked
    to learn that spiral sliced ham isn't the only choice proscribed by the
    vatican!

    You're allowed to NOT eat it ont easter???

    The menu seems to be glazed ham with pineapple, macaroni and cheese,
    asparagus, or green bean casserole, honey/dijon mustard, croissants and
    lots of dessert.

    Not yet, but would love some!
    I plan on quitting my job when I have kids so I can focus more on home life
    and we can save money. I'm looking forward to being able to skip driving to
    and from work each day.

  8. Yeah I cook 3 meals some nights... Bonnie eats at one time I eat either when
    she does or when DH wakes up and then I have to make a meal with carbs for
    DH because he does not want to do low carb.. If I eat my dinned before his
    then I am not tempted to cheat.

    cheese fresh out of the oven as one of the side dishes for every holiday
    meal... Thanksgiving, Christmas, Easter, St. Patrick's day, etc.
    Actually, the best mac n cheese I've ever eaten was visiting my
    sister-in-law in the south during a holiday.

    I find that very common, especially in the south.... homemade steaming mac

    i'm just used to ethnic food, i guess you'd say, so when i first
    encountered mac & cheese at a "real" meal I thought it was a joke. My
    in-laws do it. That's really the only place i've seen it and it involves
    velveeta - the dairy product that needs no refridgerating (eeewwww)

    i'm not used to the food traditions of america so much. i've never eaten
    hamburger helper or tuna casserole - LOL. i don't even eat mayo! (ick) But
    wasn't I surprised when I found out all my classmates where not having
    baccala on christmas eve.

    I'm not worried about the easter meal till may anyway...we'll just get lamb
    and cook it on the souvla, mmmmm.

    lol My grandfather requested it because he was tired of turkey.. The year
    we had lasagna was better.. My mom makes her Baked mac and cheese with real
    white chedar shredded and then layered with cooked mac. and then milk
    dumped on and baked.. But yes I am kinda joking.. does not matter what you
    do Mac and cheese is never fancy😉

    We never used velveeta.. always used real White Extra Sharp Chedar.

    from scratch by my MIL. It's to die for . :-).

    Thats odd.. it costs like 25cents a box.. my moms recipe was a bit more
    costly then that.. though it was cheap enough that we had it ALL the time.

    Hey None,

    If eating the boxed kind is puttin' on airs, I'm kinda scared of
    what is common. We lived on the boxed kind in college, it was
    available for 15 to 19 cents a box back in the late 60's.
