Quick question - can I fit V-brakes to a frame currently fitted with
cantilever brakes? (Ignore brake lever compatibility for the minute.)
The bosses look the same to me!

Yes the bosses are interchangeable BUT don't forget that the levers are
different ! Cantis and Vees have different amounts of cable pull to make
them work - although some levers can be set for the appropriate type.

This could get complicated, but I already have Diacompe 287V levers on
my drop bars working with cantis (fitted like that when new), which
everyone says can't work but they have been working well for around 9/10
years. However, I'm considering changing to flat bars, and have a spare
set of EZ-Fire levers (as you do!) that are V-brake specific. So now
you know why I said to ignore the levers :-)
I'm also assuming that a 9/10 year old Shimano 8-speed derailleur will
work with current 8-speed shifters...

Not true. All my bikes with v-brakes had only partial outers. You can
have a problem with the location of the final cable stop but you can buy
a device called a backstop from Ison that will do the job:

When I replaced the cantis on my old tourer with linear-pulls, the tops of
the arms interfered with the forward end of the rack. A couple of
home-brewed brackets solved this for a while; converting the bike to fixed
allowed me to dispense with the rear brake and restore the rack to the
horizontal.

That is a concern. I've measured it all, and it /should/ fit, but until
the brakes actually turn up I won't know for sure.

Incorrect assumption! I did some cable pull measurements last night,
and the EZ-Fire levers pull about 23mm over the range, and the bar-end
levers pull around 19mm. Oh well. Just as well I have a compatible
rear derailleur spare! The front derailleur cable pull is identical.

Cantis can cope with a wide(ish) range of different cable pull, because
changing the straddle cable height adjusts the mechanical advantage.
Hence it's normally no problem getting them working with 'V' levers.
V-brakes don't have the same flexibility, so tend to feel mushy if used
with non-'V' levers.

Wow! That makes a change from scores of people telling me that my
perfectly functional set-up of 9 years or so can't possibly be working!
I'm glad someone else admits it can work. I have a very short
straddle cable.
