For lunch we had softshell crabs, the first we have had this year.
Sauteed in OO and butter, without seasoning. Served with chives on top
and a side of ramps and split cherry tomatoes. Yummy.
The ramps were a few that we didn't cook for last night's dinner.

This is a repeat of my last answer to the same question. I guess I
should put it in whenever I mention them. The pop up every spring for
two or three weeks.
