For lunch we had softshell crabs, the first we have had this year. Sauteed in OO and butter, without seasoning. Served with chives on top and a side of ramps and split cherry tomatoes. Yummy.
The ramps were a few that we didn't cook for last night's dinner.
Wild allium that grows throughout the Appalachian range, sometimes called 'wild leeks' although it looks as much like scallions as leeks. Much favored by New Yorkers and hillbillies.
