Place the Splenda and Heavy Cream in a bowl, mix on high until mixed through. Add Cocoa and Vanilla and mix on high until partially firm. Add Cream Cheese and mix until stiff.

I make a very similar mousse by skipping the cocoa, vanilla and splenda, and adding any flavor sf jello powder. Lemon is awesome! Very low carb.

I've used a very similar idea for "frosting" low-carb desserts. My kids like it too. I enjoy coming up with recipes that fool my kids into not eating so much sugar. 🙂

I often make something similar - I lightly whip the cream and cream cheese, blend together with sweetener to taste (I use a bit less than a 1/4 cup equivalent because I'm not into really sweet 'stuff'😉. Then I remove 1/3 of the mix and add 2 tbs Peanut Butter. To the rest, I add the cocoa and vanilla. I then layer the mix - 1/3 of the chocolate mix, half the PB mix, 1/3 chocolate mix, the remaining PB, the remaining chocolate mix. Chill if you want a mousse-like texture, or freeze then cut into slices for a chocolate-PB Heavenly Iced Treat.

My still-under-warranty-computer is in the 'puter hospital (shipped back to HP) because the audio harware is fubar. My recipes along with all my other files are on the HD on that PC. They may have to replace the motherboard and wipe the hard drive in the process, but they will back up my files for me first if they do that. Either way , I'll post the recipe when I get my computer back. (I'm using an ancient 300Mhz, Windows 98 laptop that I took out of storage and dusted off to use for posting and to read mail for now ....)
