I usually use Zatarain's fish fry coating; it's more like cornstarch
than cornmeal. Cornmeal seems more fitting for catfish, you know? If
I didn't have Zatarain's I'd go with the flour, salt, pepper and a
little cayenne. Hang on, let me read the box...
It's cornstarch (corn flour) with garlic powder, lemon, "spices" (read
cayenne) onion powder and MSG (salt). Got cornstarch? If not, flour
will work!
I dredge the fillets twice; first time, let them sit on waxed paper
for a couple of minutes. You know how the coating is absorbed by the
moisture after a minute or two? Then dredge again. Fry on fairly
high heat, like you said, about 3 minutes per side. Tilapia is
usually thin. Don't overcrowd the pan.

I read your post and went to Dierbergs for Zatarain's . The flour would
most likely be okay, as you said, but I thought I'd try this. I'm not a
fish fry type of guy 😉 I'll make them at about 10pm tonight, when the SO
gets home.
I'm posting from the basement, covered in pets. I gots Ramsey and Bart on
the lap, Missy at my feet, Hoot is hissing from a corner and Shelly (sick
little guy) is on the chaise lounge buried in blankets. All is good today.
