  1. Since we both seem to be the tilapia freaks around here I thought I'd ask
    you. I picked up 6 fresh fillets this morning and do they look good. I'm
    going to fry them but I'm not makin fish tacos. Here is what I'm gonna do
    and please correct me if you see anything I can do differently

    Dredge fillets in flour seasoned with S&P, and cayenne. Fry until crisp
    maybe 3 minutes per side.

    Whaddya think? I'll serve with house made tartar sauce. I was thinking of
    using corn meal but flour sounds about right with tilapia.

    I usually use Zatarain's fish fry coating; it's more like cornstarch than
    cornmeal. Cornmeal seems more fitting for catfish, you know? If I didn't
    have Zatarain's I'd go with the flour, salt, pepper and a little cayenne.
    Hang on, let me read the box...

    It's cornstarch (corn flour) with garlic powder, lemon, "spices" (read
    cayenne) onion powder and MSG (salt). Got cornstarch? If not, flour will
    work!

    I dredge the fillets twice; first time, let them sit on waxed paper for a
    couple of minutes. You know how the coating is absorbed by the moisture
    after a minute or two? Then dredge again. Fry on fairly high heat, like
    you said, about 3 minutes per side. Tilapia is usually thin. Don't
    overcrowd the pan.

    I read your post and went to Dierbergs for Zatarain's . The flour would
    most likely be okay, as you said, but I thought I'd try this. I'm not a
    fish fry type of guy 😉 I'll make them at about 10pm tonight, when the SO
    gets home.

    I'm posting from the basement, covered in pets. I gots Ramsey and Bart on
    the lap, Missy at my feet, Hoot is hissing from a corner and Shelly (sick
    little guy) is on the chaise lounge buried in blankets. All is good today.

    a nice mixture and I don't deep fry, I just pan fry. It can be used on
    veggies, too.

    Shelly is a cocker and has Cushings. Not much I can do but keep him
    comfortable. I'm just sick about it but not a damned thing to be done about
    it. Meanwhile, I may make some clam chowder. I've got a couple of cans
    of canned clams.

    Okay, I liked the tilapia. I really can't say if the Zatarains was better
    than flour or not. I'm guessing it would taste about the same. I should
    have added cayenne to the mix but I didn't. It was good anyway. I served it
    with rice and a chicken gravy (don't ask). I'm not real big on fried fish
    for some reason. I really want to try the fish tacos though.

    Shelly is snoozing right now. He is such a doll. I'm so sad he'll not make
    it. Tears me up.

    I'm not real big on fried fish for some reason. I really want to try
    the fish tacos though.


    I still can't get my head around fish+tacos. When I grill tilapia I still
    like to pat some of the Zatarain's mix on it. And yes, I use foil grill
    sheets, otherwise the fish cooks so fast it falls through the grate onto the
    coals when I try to turn it.

    Awww, that poor dog. I feel for ya. It's so hard. Make him as comfortable
    and happy as possible. Maybe give him a soft stuffed animal to snuggle
    with. I wish I could do something, just as you do.
