I use very specialized ingredients like wheat protein isolate, oat fiber (not bran), polydextrose, etc. that I have to order online. If you're still interested, I'll post it. :-)
I've never found an extract that actually tasted like real bananas. By using LC ingredients to replace the flour and sugar, I make LC banana bread with real bananas that comes out to 6.56g net carbs/slice and it's a large loaf cut to 12 servings. No soy or ground almonds either. I've never had a banana bread that had raisins like the OP mentioned, only nuts.
