  1. but sweet! a friend of mine made me a "low carb" banana bread out of almond
    flour and stevia. Ok I know that bananas are not low carb and bread is not
    low carb and the rasins are not low carb but she was so sweet trying! oh
    and it is yummy.. I love banana bread.

    That was sweet of your friend, but you can make a low carb "banana"
    bread using banana extract. I've done it as a variation on my
    muffin/coffee cake recipe.

  6. I've never found an extract that actually tasted like real bananas.
    By using LC ingredients to replace the flour and sugar, I make LC banana
    bread with real bananas that comes out to 6.56g net carbs/slice and it's a
    large loaf cut to 12 servings. No soy or ground almonds either. I've
    never had a banana bread that had raisins like the OP mentioned, only nuts.

    I have never had it that way either.. it is verry good.. I would leave them
    out if I where to make it myself.. anyway the almond flour is good also and
    I am planning on making something with it myself as soon as it cools off a
    tad.

  8. All of my banana bread recipes call for walnuts but I like to use pecan
    pieces. I also use them to replace raisins in the recipes that do call for
    them. They seem to soften when baked so lend a similar texture to raisins.

    Just keep in mind that along the way you'll have many friends who have good
    intentions but who also have no clue about LC....yes, they will make sweet
    gestures toward you. How you respond will impact your level of success with
    weight loss.
