freezing fresh mozzarella?

  1. I live in the country and it's hard to find good food products. I came across some real, fresh
    mozzarella a few days ago. You know, the real, soft kind, not the rubbery kind. Well, I was so
    excited to find it, I bought a bit too much. What would it do to the texture to freeze fresh
    mozzarella? I'm guessing that it would make it the usual crumbly texture. But does anyone out there
    have experience with this? Anna Maria? Anyone?

    This came packed in plastic, not in water like in the deli. Also any ideas on how long it will last
    if it's a just plain stupid idea to freeze it?

    As an aside: This kind of ties in to the simple food/obesity thread. The kids here aren't obese. But
    it's a forty minute drive to the nearest fast food joint. And for summer time fun, the kids go
    swimming in the River. Simple life, simple foods, and no obese kids.

    Well, I mostly cook with mozarella. I seldom use it as a snacking cheese, so you could just shred
    it, THEN freeze it.

    I buy 2 lb. packages of shredded mozarella (as well as jack and colby-jack) and keep it in the
    freezer just for recipes. If I did not freeze it, it'd go moldy before I used it all up.

    Does not make ANY difference since I'm using it to cook with.

    Frozen (fresh) mozzeralla is fine. I unfortunately had to toss mine owing to a long power outage,
    but previous to that, it was fine for most purposes. Texture slightly affected.

    Not stupid at all. The "sell by," "best by," "explodes on" dates on plastic-enclosed cheese are PR.
    Again, texture may suffer somewhat on freezing, but your pizza will still welcome the shreds.

    Fresh mozz is not meant to be cooked (cooking fresh mozz would be a shame, but a lesser shame than
    freezing), it is supposed to be eaten fresh, as is, as in salad and anti pasta, eaten with
    sopressato, prosciutto, or with fresh vine ripened tomato drizzled with balsamico tradizionale. What
    you bought was likely packed in salt water. If you store your extra mozz in salted water, in a
    covered glass container (no metal), in the fridge, and change the salted water each day it should be
    fine for at least a month. I highly suspect you'll not need to worry, you'll will consume the
    balance in less than a week. Please do not freeze fresh mozz, it will be ruined... then you'd be
    better off preparing a giant lasagna with it and freezing that.

    One can have a simple life wherever one chooses to live. I drive by the fast food joints and learned
    long ago how to cook a good/healthy meal in 30 minutes and have healthy snacks around if cooking the
    meal would take longer. (Just say no to your kids when they ask for it or make it an occasional
    treat.) My daughter is naturally active and acheived a black belt in Tang Soo Do a couple of years
    ago at age 15. Studies are saying that it's the suburbs that encourage people to lead a sedentary
    lifestyle.

    OB Food: How much is too much fresh mozzarella? I'd be eating that all week in Antipasto, Capri
    salad, etc. You may be able to find recipes that use fresh mozzarella that you can freeze.
    Also, if it's hard to find in your area, you can make your own, searching Google will turn up a
    recipe or two.

    I think you jumped into this thread in the middle. Calm down and take it easy. What happened is that
    somebody, Sheldon actually, called me a redneck. Instead of getting upset and flaming back and
    forth, I just went along with the game. Although not one of them, I do live in the Land of Rednecks.
    So I know to be called a redneck is not the worst thing in the world.

    Lighten up, laugh a little. And the best person for each of us to laugh at is ourselves.
