  1. She wasn't the prettiest little chick that I've ever turned out, but for
    the first try at brining and spatchcock, it was mighty tasty. Brined
    overnight in a simple solution of salt, pepper, orange peel, orange juice
    and water. Tonight's rub consisted of a little EVOO, fresh squeezed OJ, sea
    salt, dehydrated garlic, lemon pepper, Cavender's, Tony Chachere's cajun
    spice mix, paprika and fresh ground BP.

    Sides were fresh steamed broccoli with clarified butter and lemon juice,
    grilled Vidalia onion halves brushed with EVOO (picked up 20 lbs. at the
    source this week), mac-n-cheese (blue box it's what the rugrats like) and
    Strawberry/Blueberry muffins.

  2. Chickpea stew -- canned chickpeas, frozen corn, salsa, chicken broth
    -- served over rice and topped with cheese and parsley.

  4. We're doing steaks and potatoes with a bit of "can salad" with creamy greek
    dressing and some leftover shrimp. Very tasty.

    Can Salad (perfect something different when you haven't bothered to go to
    the grocery store and are throwing something together)

    1 cup of frozen peas, thawed in a bowl of water then drained
    1 cup of frozen white corn, thawed as above
    2 roma tomatoes, chopped
    1/2 red onion minced
    1 can of sliced black olives, drained
    1 can of garbanzos, drained
    1 can of sliced mushrooms, drained
    1 teaspoon of lemon juice
    1/4 cup of regiano or parmesean cheese
    1/4 cup of feta
    Salt and Pepper to taste
    1 head of romaine chopped or torn (for serving the mix on)

    Toss everything (except the lettuse) together with the dressing of your
    choice. Salt and pepper if needed. Serve spooned onto the romaine. I
    drizzled an extra bit of dressing on just before serving and topped it with
    some bacon bits.

    I used some homemade creamy Greek because I wasn't in the mood for ranch but
    any dressing will do, whatever you prefer.

  5. Grilled medium-rare tri-tip roast rubbed with olive oil, garlic,
    chipotle chile powder and salt.

    Sauteed sliced onions and red pepper until tender and slightly carmelized.

    Grilled jalapenos (Put on rubber gloves. Wash fresh jalapenos. Cut off
    stem end then slice in half long ways. Scrape and rinse out seeds and
    ribs. Fill remaining pepper-boat with sliced or shredded cheese of your
    choice. Grill until cheese is melted and bubbly.)

  6. Some fancy food for a Tuesday night here in some of your houses.

    I'm getting a cold so my husband made me tomato soup and added blue
    cheese to it. Very tasty and soothing on my throat.
