She wasn't the prettiest little chick that I've ever turned out, but for
the first try at brining and spatchcock, it was mighty tasty. Brined
overnight in a simple solution of salt, pepper, orange peel, orange juice
and water. Tonight's rub consisted of a little EVOO, fresh squeezed OJ, sea
salt, dehydrated garlic, lemon pepper, Cavender's, Tony Chachere's cajun
spice mix, paprika and fresh ground BP.
Sides were fresh steamed broccoli with clarified butter and lemon juice,
grilled Vidalia onion halves brushed with EVOO (picked up 20 lbs. at the
source this week), mac-n-cheese (blue box it's what the rugrats like) and
Strawberry/Blueberry muffins.
