Very nice dinner, Wayne.
A 'walking' chicken (free range) Empire brand from Trader Joe's. We made it according to Bittman's instructions which is basically roast at 450ºF in a skillet (we used a cast iron skillet, not a dutch oven). The breast was not covered with aluminum foil. It was perfect.
At the same time, we roasted Beets (organic) and Butternut squash mit butter. Steamed broccoli French Bread Sicilian wine (inexpensive, unusual tasting, DH liked it better than I did.)
