Beans are hard to make for a small group, I agree. Try other canned beans beside refried beans. Black beans, kidney beans, italian white beans, butter beans, garbanzo beans.

'cause Del Taco makes pretty good beans. Not as good as Pueblo Nuevo, but quite edible, none the less.
Hmmm, I need to round up some of the gang for a Pueblo Nuevo run. Last time we went to LA Real Taco, but that's gone the way of the passenger pigeon now.

Of course, but the great burritos come from the taquerias inside mercados that serve mostly the unassimilated, recent immigrants, most of whom are here illegally. You know, the little groceries that sell Mexican music, and wire remittances back home. Without the undocumented folks, most areas in this country wouldn't have the critical mass of unAmericanized Mexicans to support the places that serve tongue and tripe and cabeza, which are the places where the good burritos happen.
Now, in TX, Chicago, and some other areas, there are enough legal Mexicans, but in most of the country there are not.
What's your favorite bean burrito recipe? I'm a fiber addict and make them frequently.
I use whole wheat burrito wraps if I have any otherwise regular tortillas, El Paso refried beans, a bit of strong cheese - blue or whatever, thin-sliced meat (sausage, cooked chicken or whatever, chopped onions, and I apply some enchilada or taco sauce to the top of the wrapped result. MW for 5 minutes.
For a twist, preheat an oven to 350 degrees and bake for fifteen minutes. Swirl your favorite sauce into the original filling so there is no mess, and eat them like a crunchy sandwich.

I've done that too. I freeze them whole. The way I make refried beans is not exactly Hoyle, but they taste fine to me. I add some olive oil and mash them with a potato masher. I don't like mine totally mashed to mush. If I want them like that, it is easy enough to do with a small batch that has been frozen and put in the microwave to heat. Or I will just use them whole. That way is good too. In fact one of my favorite burritos was at a place that is no longer in business. Their lease ran out and the building owner had other plans for the place. They made them with whole pinto beans. Oh so good!

I love beans and rice, tomatoes, cheese, (black olives and onions if I have them) sour cream and lettuce. I do my own refried beans and also a simple chili sauce. I freeze both of them in small batches. I either cook rice specifically for burritos or else use leftover rice and flavor it with the chili sauce (not hot, just tasty). I spread the tortilla with beans, add the rice and everything else. Janet
I will use rice with beans, some onion, renchilada sauce, non-canned (if possible) roasted green chilies, chicken, and bake for a while, cover with some red enchilada sauce and top that with shredded monteray jack and then fresh ground black pepper and bake until the whole thing is a bubbly mess.
