I think you might be able to freeze it, as it's happened to
me on a number of occasions by accident. The sour cream got
shoved to the back of my fridge where it froze solid. I
just let it thaw near the front of the fridge and it was
fine. There was a bit of liquid at the top but you can just
drain that out.--

You can freeze it, but you will have a thin film of liquid
on top when defrosted. Pour it off. As to how long it can be
frozen? Don't know-never did it intentionally. -

You can feeeze just about anything. However, somethings
change drastically when you do. Sour cream is one of those
things. It seperates, turns grainy and no longer is the
rich, creamy item you started with. It will taste close
enough to the original but if the texture is important,
don't freeze it. You would never serve it in a dip, for
example, after thawing. -

of freezing it. I would put some in a container and freeze
it for a day or two, then thaw
it. I think it will separate into a curdled mess, but it
might be worth of try if you have a couple gallons that
you can't use over the next month. -
When frozen, the water molecules expand and can break cell
walls. The structure of proteins in particular suffers. It
is the expansion that breaks cell walls and makes products
