Pretty much any type of bean can be used with good results.
Soybeans are very good as hummous.

It is fine - not quite the same, of course, but very good.

I like most soybean foods so one day I bought a bottle of
Soy Butter that's a substitute for folks allergic to
peanuts. Gag me with a spoon coated with brown slime! On the
other hand soy bean paste makes tofu and tofu absorbs other
flaovers. Since hummus has chick peas plus sesame tahini
plus garlic plus olive oil, the other ingredients should
    supply okay flavor.

So it sounds like one of those things I'd have to try to
find out if it's good or bad.

Don't know. The real question is what is the Arabic word
    for soybeans?

  6. I've had it and it was good. Lighter and brighter than
traditional hummus. Of course, I'm sure there are tons of
different recipes for it, so who knows whether they'll
    all be good.
