Dinner tonight

  1. I don't care how many times I post this one, it's a total
    classic and worth it every time, plus or minus modifications:

    bone-in strip steak sliced russet potato whole white button
    mushrooms pasilla pepper

    all grilled; the mushrooms were selected to be the same size
    and skewered; the mushrooms, potato slices, and steak were
    coated in da Vinci EVOO and kosher salt; the pepper was
    seeded, membraned, skinned, and diced after grilling; steak
    done medium-rare

    paired with a 1999 Trinchero Merlot; I've had this sitting
    in my rack for years, and finally uncorked it. Brilliant
    vino. Just transcendent. I paid like $10.49 for it and it's
    worth $40 easy.

    P.S. Finishing the day with a little Cask Strenth Macallan
    Scotch; proof who knows. Like I said. Living.

    Nice. It's good to be on top of the food chain!

    When you write "pasilla pepper" do you refer to the wide-
    shouldered dark green chile that tapers to a blunt point? If
    so, I'd call that a poblano, but that apparently has to do
    with location. Here in Cow Hill, the word pasilla refers to
    a dried chile, not something one would prepare as you
    describe it. Rick Bayless has something about this in one of
    his books -- different folks call the same chiles by
    different names, it seems.

    A Pasilla looks like a cross between an Anaheim and a
    Poblano (i.e., medium-wide shoulder, more pointy than
    blunt), but is much spicier than either of those. It's a
    sharp spice that doesn't linger too long (if the skeletal
    membrane and seeds are removed). Because it's spicer and
    has very good size and grillability, it's by far the
    superior pepper.

    Tonight I tried out a new BBQ sauce on a grilled pork
    butt steak. Well not really a new bbq sauce but a new
    blend, I guess.

    1 bottle generic BBQ sauce (approx 2 cups) 1 jar apple jelly
    (approx 1 cup) zest from 1 lime 2 tbsp cider vinegar

    Put everything in a sauce pan , over low heat blend and mix
    well. Bring to a simmer and reduce slightly to thicken.

    Notes from after use and for next batch: A few crushed red
    pepper flakes and a pinch of salt wouldn't hurt.

    Half a T-bone. Sawed lengthwise to separate the strip and
    the tenderloin.

    The L-shaped bone encases the two meat-side edges, the third
    edge being encased in a layer of gristle.

    Isn't that hilarious? I really forgot. Yes, dinner was
    great, but I did have to do the obligatory Moxie! Come see
    what I have! She was curious but okay until the lobster
    moved. So mean I am.
