  1. Beet Latkes

    1 c Finely chopped fresh beets 2 tb Cornstarch 4 lg Egg
    yolks beaten
    1/2 ts Sugar 3 tb Heavy cream or undiluted evaporated milk
    2/2 ts Ground nutmeg 1 ts Salt

    Combine all ingredients in a mixing bowl. Mix Well and bake
    in pancake fashion on a hot buttered griddle or heavy
    skillet. Serve with Fruit marmalade or preserves. Yield
    about 12 pancakes

    looks pretty weird to me. Four egg yolks? Looks more like a
    recipe for Beets Foo Yung, emphasis on the FOO! Gack, gack,

    Geeze, yoose gotta give it a chance... I'm sure Beet Latkes
    would be just fine served with your Fruit marmalade or
    preserves... what you call one complimenting the other.

    Have you actually made this before Sheldon? It kind of
    sounds interesting, but I agree with Melba that it seems a
    little funky. I do like beets tho. Aren't fresh beets too
    hard to use this way? I would think that they would need to
    be boiled first. Thanks.

    Good to know! I'll file this recipe away for one of those
    times when the man is out of the house. He hates beets as
    well as cabbage, fish, crab (I discovered last night), etc.
    Soooo boring IMO. He'll criticize my food and brag about how
    he once ate boiled cow eyeballs...........whatever.
