Stir fry. ;-)
How about asparagus, savoy cabbage, bok choy, celery,
carrots, swiss chard, fresh string beans, etc.? There is a
world of fresh veggies, as I've discovered over the past few
years while trying to switch over to a fresher diet!
it's fun. :-) And delicious once you learn how to prepare
them. I usually slice squash for stir fry and make sure it's
still slightly crisp. It's also not bad served raw dipped in
ranch dressing, or sliced and lightly coated in spiced corn
meal and fried in olive oil.
