Steamed Squash Suggestions needed

  1. I have never tried squash before last night. A friend of
    mine cut the squash up in small round pieces and put olive
    oil, and parmesan cheese on it. I really don't care for
    parmesan cheese the much.

    I am trying to eat more vegetables. What can I do with the
    following items I like to make a nutritious squash entree? I
    like onions, tomatoes, garlic, a little olive oil, lemon,
    Italian seasoning, pepper, salt, oregano. What combination
    can I use and still make it taste good?

  2. There are many varieties of squash, but they fall into 2
    broad categories: the winter squashes which include acorn,
    butternut, buttercup, pumpkin and others which are generally
    cooked one way and the summer squashes which include
    zucchini, yellow crookneck and patty pans which are
    generally cooked another way. What sort did you have? It
    makes a difference to how the question is answered.

    There are a number of good recipe sites on the internet.
    Epicurious.com is a good. In addition, since you are
    interested in vegetables in general and need some basic
    knowledge as well as proven recipes, I would recommend that
    you get a copy of "Vegetable" by James Peterson. This is
    wonderful book full of useful information including how to
    select vegetable at the store, basic storage and preparation

    Stir fry. ;-)

    How about asparagus, savoy cabbage, bok choy, celery,
    carrots, swiss chard, fresh string beans, etc.? There is a
    world of fresh veggies, as I've discovered over the past few
    years while trying to switch over to a fresher diet!

    it's fun. :-) And delicious once you learn how to prepare
    them. I usually slice squash for stir fry and make sure it's
    still slightly crisp. It's also not bad served raw dipped in
    ranch dressing, or sliced and lightly coated in spiced corn
    meal and fried in olive oil.

    My favorite is spaghetti squash. Cut lengthwise scoop out
    middle contents I use a thin layer of pasta sauce on top
    sprinkle with oregano and other italian seasonings. Put in
    glass baking dish with about one inch of water, cover with
    foil, bake @300 till meat is fork tender. I have friends who
    just dot the squash with herb butters and olive oil. You can
    use what suits you on this.

    Sounds like you are already prepared to *hate* squash,
    whatever kind it might be.

    Here's a great recipe for yellow (crookneck) squash
    casserole. If you don't like Parmesan cheese, leave it
    out and maybe increase the breadcrumbs by a third... or
    the squash by a third. This is a very forgiving and
    adaptable recipe.

    Squash Casserole

    1 to 1-1/2 lb. yellow squash, sliced and steamed until
    tender 1 c. grated parmesan or romano cheese 1 c. dried
    cornbread stuffing crumbs 1 c. milk 1 Tbs. minced onion 1
    Tbs. melted butter 2 eggs, lightly beaten
    1/2 tsp. salt
    2/4 tsp. pepper

    Combine all ingredients in a casserole dish. Bake at 350F
    for one hour.

    winter squash (with hard orange flesh) or a summer squash
    (like zuccini). They are cooked quite differently.

  8. Squash is my favorite vegetable. I could eat a different
    squash every day of the week and never feel like I was
    eating squash on a daily basis.

    From the description, it sounds like zucchini. Personally, I
    like them steamed, tossed in a little butter and a very
    light sprinkling of parmesan (optional). My vegetables are
    usually served as plainly as possible. Not much point in
    piling on unneeded calories when you don't have to.

    chopped onion and garlic in olive oil, add the sliced zukes
    and saute for a while, add some oregano or basil (or both if
    you like them combined), then throe in some halved cherry or
    grape tomatoes. Saute for a couple more minutes...serve over
    spaghetti. Parmesan cheese optional.

    That sounds like a main dish, not a side dish.

    meat meals.
