    I'm not sure how long it keeps in the fridge. We're big
    cheese eaters and go through it within a week. I buy it
    fresh also. Eating it plain is just fine with me 😉 I don't
    buy it that often. I usually only buy it when I'm making
    something I need it for or for the above mentioned salad. I
    buy shredded when I'm making a pizza.

    No wrong way to enjoy what you enjoy. I will say that plain
    mozzarella is a bit more bland than I like. Salt, pepper and
    a drop of balsamic for me.

    Depends. You're keeping it in its liquid, right? It should
    last the better part of a week, if chilled. Over time, the
    surface will soften from the liquid and have a different,
    "mushy" mouthfeel.

    Roll in flour, egg wash, dredge in bread crumbs and deep fry
    for a minute or so. Can even do it on sticks.

    immerged in its liquid, or at least water.

    Tomatoes, fresh mozzarella olive oil and basil is probably
    my all-time favorite summer salad. I like to gild the lily a
    bit and drizzle it with some balsamic vinegar and throw in
    some kalamata olives as well.

    I think you lose the 'freshness' of fresh mozzarella if you
    keep it more than a couple of days. I'm talking about the
    "real" fresh mozzarella, the kind made in the back of the
    deli you're buying it from, not made at some distant
    manufacturing plant and packaged in hermetically sealed
    plastic wrap. (I laughed when I saw this aberration in my
    local Safeway
    - talk about unclear on the concept!)
