Both. Either. I wasn't even thinking of strictly main dishes. Anyone have a veg timbale favorite?
Dinner was supposed to be bean soup... not the fancy multi-bean kind, just pinto beans.
Unfortunately, although I soaked the beans last night - I got home way too late to cook them
properly before midnight.... so I made (brown) lentils for dinner instead. I added a can of stewed
tomatoes, added lots of garlic, onion and some Italian Seasoning to the lentils. I let it cook for
an hour in a minimum of water, then added zucchini slices at the last minute - I let them cook for 5
minutes or so and served it over rice.
The pinto beans are cooking over low heat tonight and they'll be a thick soup tomorrow. I've added
garlic & onion so far. Later, I'll add a tomato & SALT to taste.
I'll serve the soup with a garnish of chopped fresh cilantro & a dollop of salsa.
