    Trying to figure out how much lard I am going to have to render (how much fat to buy) to fry up some
    turkeys...peanut oil sux and I don't want to use the hydrogenated lard available at the store.

    You may want to check out a mexican grocer/carniciera if you have one nearby. They often render
    their own lards, and use it for frying those huge chunks 'o pigs and skins.

    Note that deep frying in pure lard literally stinks.

    In addition, I cannot seem to get back fat easily. The only meat market around says .99/lb with a
    minimum order of 60 pounds.

    I am not sure where I would store all that or how long it would take me to render that much. I am
    guessing a long time. That is why I was asking about volume after rendering a pound of fat.

    The price doesn't seem bad when compared to Niman Ranch backfat at like $15 for 5 pounds or
    something. It is just the amound that meat place wants me to order.

    He told me they don't get it fresh anyway they order it frozen. All the fresh stuff they use to make
    and sell sausage and he wouldn't sell any.

    The Mexican markets, in my experience have backfat in their cases. I rendered lard this past summer,
    for a cooking project. I was in Las Cruces, NM, and all the mexican markets had backfat readily
    available. I made some pretty good lard from that backfat.

    It took a few hours to render, but it was worth it. I think I had about 4 or so pounds of backfat,
    maybe more. And from that, I think I got about a pound or so of lard.

    how much in reality you detest peanut oil.
