their own lards, and use it for frying those huge chunks 'o pigs and skins.Note that deep frying in pure lard literally stinks.

guessing a long time. That is why I was asking about volume after rendering a pound of fat.The price doesn't seem bad when compared to Niman Ranch backfat at like $15 for 5 pounds or

for a cooking project. I was in Las Cruces, NM, and all the mexican markets had backfat readily
available. I made some pretty good lard from that backfat.It took a few hours to render, but it was worth it. I think I had about 4 or so pounds of backfat,
maybe more. And from that, I think I got about a pound or so of lard.Christine
