Question about bananas

  1. As you probably know by now, I make quite a lot of banana bread. I
    hate wasting bananas that have become too ripe.
    I have not (until recently) frozen leftover bananas. I thawed out a
    container this morning and found icky-looking bananas in a lot of
    liquid - they looked so unappetizing I dumped them.

    Comments, anyone?

    I'd guess that defrosted frozen bananas might be OK in things
    like banana bread, tho' I've never tried. However, banana bread
    is best made with really ripe fruit, IMHO. As someone who likes
    naturally ripened bananas with just a slight hint of green on
    the skins, I learned a long time ago that the ripening of
    bananas can be slowed down by keeping them in the fridge
    (despite the advice of Chiquita Banana!) The skin may turn brown
    but the interior will be fine for several days.

    Ah - I'll try that. I didn't mash them, but cut them to fit into the
    container then into the freezer. I prefer to use them as is but often
    they are too ripe before I can get to the task. Thanks, Wayne. If at
    first you don't succeed.............
    BTW - put in a Ziploc?

    Ah - I'll try that. I didn't mash them, but cut them to fit into the
    container then into the freezer. I prefer to use them as is but often
    they are too ripe before I can get to the task. Thanks, Wayne. If at

    Yes, but freeze them first, then into the Ziploc.

    Before freezing peel them but do not mash them. Wrap each individual
    peeled banana in wax paper and freeze. Then you can use them frozen
    in smoothies, thaw and bake with them, or for a great snack eat them
    frozen.

    When bananas defrost, you will find a lot of liquid. If you taste the
    liquid, you will notice it is sugary sweet. This is not a problem if
    you are making banana bread. Mash the bananas, and proceed as usual.

    If you are making shakes out of frozen bananas, you will not defrost
    them, so the liquid will not be an issue.

    The skins turn black, but that's OK.

    When you want to make banana bread, thaw the required number of bananas,
    peel the skin down one side and spoon out the fruit. It won't need
    mashing.

    Yes. That's normal for thawed very ripe bananas. Use them, including the
    liquid.

    I've had good luck freezing individual bananas in their skins.

    Generally that works fine. It's true that when they thaw, some liquid
    will come out, but that's normal from frozen things. Just mash the
    thawed bananas into the liquid.

    Will second that suggestion. Just wrap them well but leave them in the
    skin.

    Freeze the banana whole or flash freeze (slice, place on a cookie sheet,
    freeze, remove from the cookie sheet and put in a large zip lock, then store
    in the freezer.
    My DD can't eat dairy and LOVES frozen banana when everyone else is eating
    ice cream. So do I.
    I also use the frozen banana in banana bread, banana pancakes and banana
    cake.
