As you probably know by now, I make quite a lot of banana bread. I
hate wasting bananas that have become too ripe.
I have not (until recently) frozen leftover bananas. I thawed out a
container this morning and found icky-looking bananas in a lot of
liquid - they looked so unappetizing I dumped them.

    Comments, anyone?

Do you have a favorite banana bread recipe ?

    <rj>

I'll bet Dora's is a spot on terrific recipe. I hope she posts it. <hint

Don't thaw them out - just buzz them.

Here's my favourite, posted a couple of times over the years. It's a
food processor version, made in nothing flat.

    Banana Nut Bread with Raisins

    3 large bananas, very ripe
    1/2 cup brown sugar
    2 eggs
    1/2 cup oil
    1 teaspoon vanilla
    1 1/2 cups flour
    3/4 teaspoon salt
    1 teaspoon baking soda
    1/2 teaspoon nutmeg
2 teaspoons orange rind (optional) -- grated
    1 cup pecans or walnuts
    1/2 cup raisins or currants

Heat the oven to 325ºF. Butter a 9" x 5" loaf pan. Purée the bananas
in a food processor. Add the sugar, eggs, oil and vanilla and pulse
just until blended. Add the flour, salt, baking soda and nutmeg, plus
orange rind if using. Pulse just until combined. Add the walnuts and
pulse until chopped. Stir in the raisins.

Pour the batter into the pan and smooth the top. Bake until a toothpick
inserted in the center comes out clean, 60 to 70 minutes. Remove the
bread from the pan and cool.
