    We've got a lovely choice of leftovers. Got enough Quick Swiss Chard Supper
    (hamburger gravy with Swiss chard over mashed potatoes) for one. Got
    enough gluten free Chicken and Noodles for two. Husband is working late.
    He gets whatever daughter and I don't eat. 🙂

    We're having a junk-food night. While we were out doing laundry, we
    shared a cheap slice of pizza, then bought chips and soda to eat
    while our clothes dried. When we got home, James had some
    store-bought cake and a cup of coffee. I may heat up something in a
    can later. Since my surgery, I've been cooking a fair bit, and
    wearing myself out. This weekend (starting tonight), I relax and
    only cook when I feel like it.

    LOL... some nights are like that although I love Gloria's idea of scampi.
    Steven just got home, the pasta is in lumps and the sauce is well..
    whatever.

    I was happy with the salad myself.

    I took the afternoon off so that I could cook, being in that mindset
    we were having good food regardless of how much else I had to do. So
    dinner was mushroom strudel, layers of buttery phyllo encasing a blend
    of crimini, portabella and oyster mushrooms mixed with shallot, fresh
    dill, parsley, fresh bread crumbs and creme fraiche. Basically a
    doctored version of the old Moosewood recipe.

    We took the easiest way out by going to the Iowa Cafe here in Mesa for
    breaded pork tenderloin (the real thing) sandwiches and homemade pie.

    I went horseback riding most of the afternoon. Kris and I did a Chinese
    buffet for lunch on the way home. It was a late lunch. I did mostly an
    egg roll, hot and sour soup and a bad rendition of Mongolian Pork BBQ.
    It was edible and I was hungry.

    A piece of pumpkin pie at the Thanksgiving Eve pie feast after the
    worship service. Followed by a piece of apple pie. The pumpkin was
    great; the apple -- not so much. Rob had a bowl or two of leftover
    vegetable beef soup -- beef was a chuck roast that I chunked, browned,
    and pressure-cooked.

    the kids and I so something simple and quick.
