    By the time he got done, there was little tomato compared to the sugar,
    salt, and olive oil. I liked the part where he said that adding olive oil
    makes it Italian. He added that three times but I lost count of the sugar
    additions.

    Hey. I represent that comment. He cooks pretty much the way I do, faking it
    and adjusting along the way. It makes for some great results. To me, that
    is the art of cooking, much more indicative of a talented cook that some
    doofus who has to follow a recipe.

    Hey. I represent that comment. He cooks pretty much the way I do, faking it

    is the art of cooking, much more indicative of a talented cook that some
    doofus who has to follow a recipe.

    Forgetting the garlic and then adding it raw after the tomatoes has
    nothing to do with following a recipe... don't be a schmuck.

    Yes, it's real cooking. Just because it's not done your way doesn't mean
    it's not real cooking. He makes it that way because he likes it that way or
    his customers like it that way. Eating sugar does not make you diabetic.

    With the huge amounts of sugar and salt it looks like he is trying to
    emulate the taste of big box chain restaurant "food".

    Sugar in tomato sauce is just wrong.

    Sometimes they put only half a teaspoon to correct acidity, but also
    bicarbonato is useful for this.

    Did you watch the video? Did you see how much sugar he put in? The first
    time he added, I thought it was a lot. Then he added more. Then he added
    more. Then he added more. Then he added more. He is entitled to his
    personal taste, but I cannot imagine a good sauce having any sugar but I'd
    say a teaspoon or less if it was very acidic, but not the handfuls he put
    in.

    Looks like the reason he uses so much sugar is because he hasn't
    cooked the sauce at all for the flavors to mellow. He says he
    uses to get rid of the "bite", and it sure sill bite considering
    how he cooked it.

    So? Just because you can't imagine it doesn't mean anything. It's still
    real cooking. Just because it's not to your taste doesn't mean nobody else
    can like it. He makes it that way because he likes it that way. You like

    I prefer the addition of pork to flavor and mellow the sauce.
    A small amount of sugar is okay, but I don't expect homemade
    sauce to be sweet like store bought often is.

    Yep. he messed up there.... but he admitted that he made a mistake. I would
    have put it in before the tomatoes and sautéed it until it was golden, but
    I still wouldn't likely be sticking to a set recipe.

    Indeed he did, but it should gone into the oil to sauté before the
    tomatoes.
