I bought pure chicory, roasted and ground for a drip coffee maker from
communitycoffee.com. I brewed last night's batch in my coffee maker,
and then used a French press this morning (1 1/2 teaspoons for 10
ounces of water). I like my coffee light and sometimes sweetened, so
I added half and half and some stevia (second cup was vanilla creme
stevia drops). Admittedly, chicory tastes better sweetened. 🙂

There's a store about half a mile from my home that carries it, so I
stopped by to check it out. Unfortunately, two of the ingredients are
off limits for me - barley and rye. The rest - dandelion, beetroot
and chicory are okay. The other drawback is that it seems to be like
instant coffee, and I never developed a taste for instant.
For now, I'm happy with the pure chicory - smooth, rich and just a bit
of a bite to it. Tomorrow (or tonight!) I'll try just a teaspoon in
the French press.

I was never a big coffee drinker - one cup in the morning, and usually
almost none on the weekends. What I like is tea, but I'm off that,
too - no coffee or acidy drinks. However, I've discovered rooibus
teas, and they're okay - not terrific, but okay.
All the other coffee substitutes I've seen have grains in them - so I
can't use them.
Oh, and it may be a fluke - but so far, my BG number have been lower
than usual after a cup of chicory. I suspect it may be the inulin.
