A Spanish frittata in Spain has a lot of potatoes in it. I didn't know that
fried spaghetti with some eggs as glue was also called a frittata.

When I make a frittata - generally egg based; i.e., 6-8 eggs, whereas the
above receipe is spaghetti based - I usually finish it off in the oven. I
don't know whether that makes the difference in the term "fritatta" as it is
used.

Omelette and a Glass of Wine." Just to see what I came up with, I picked it
up and here is the page I turned to p. 120 - it says first sentence:

This probably came from Norman Douglas.

That is just how I make my fritatta but I often finish it off under the

OMG, that really choked me up. I'm a sucker for that kind of
sentimentality.

Have you read her biography?

I love this book. I have it and pull it out occasionally to re-read.
I love the chapter where she gets the inspiration of writing about
meditterenean (sp?) food.

And of her times with Norman Douglas. I like his motto too! Not
that I always follow it, but the times I haven't, I have regretted it.
And my intuition or whatever you call it nags at me and says I should
have gone my own way and done what I pleased instead.

I have her biography, and she was an amazing woman.
