Yikes, just spent over an hour making fries. I soaked the potatoes, then pre cooked in 325 for several minutes. Rested the fries -and me - for about 30 minutes.
I have a Tfall deep fryer - about 3 years new. It took a heck of a long time to cook the fries. I'm wondering if different deep fryers heat the oil quicker and make this whole process faster.

Did you raise the temp. for the second frying? I raise mine to about 375 F. from 320 F.

Did you accidentally turn the thermostat down? I had a T-Fel and even though I thought I had left it on high the heat adjustment slide had been pushed to the far side.

Chips
1.. Add oil to a large heavy-bottomed pot (fill so oil comes ½ way up the pot). Heat oil to 320 degrees F. Working in small batches, blanche the chips until soft and cooked through but not browned, about 3 minutes. Make sure oil returns to 320 degrees F between batches. Drain on paper towels and let cool to room temperature. 2.. Heat oil to 375 degrees F. and fry chips again in small batches until crisp and golden, about 1 to 2 minutes. Serve with fish and dip chips in hot curry sauce and garlic mayo. Cooking the chips twice will ensure they are golden brown and crispy on the outside. elaine

My deep fryer has no temp control.
It's either on or off.
Works great as long as I don't overload it.

Mine is a 4 cup Fry Daddy. :-)
Patience is the key! Don't add too much food at a time and you will get better results...
Like I said, too much food added at once cools the oil down and not only will it increase cooking time, you don't get stuff as crispy, and it will be a LOT more greasy!
