  1. Hello,

    I want to make some sausages and my old Food Processor is not able to
    do the job. Now I'm looking into buying a new kitchen tool to process
    meat to make it into a past like consistency. As far as I know a bowl
    cutter is the right tool to do the job, but this machines cost
    thousands of dollars and are for professionals butchers.
    I'm looking for a product that can handle +6 lb of meat, not to
    expensive and available in the USA. Does anybody has a suggestions
    what to buy and is 6 lb realistic for this price range, I found some
    Vertical Bowl Cutters from Robotcoupe, but there are also expensive.
    Would a Robotcoupe bowl cutter be good for this job? Or Ebay and
    something like a HOBART BUFFALO chopper? Maybe someone has a better
    idea what to use? Or should I try to sharpen the blades on my old Food
    Processor with a stone?

    Are you talking about emulsified sausages? If not, all you need is a
    hand grinder (like a ChopRite) for a 6 lb batch. I've seen recipes for
    emulsified sausage with hand grinders, but, have no idea how well they
    work.

    For small amounts of emulsified sausage, like bologna, and
    frankfurters, a food processor will surfice. For amounts larger than
    about five pounds it's best to obtain a machine made especially for
    this purpose... they're not cheap.

    Do you have a mixer that perhaps would have a meat grinder attachment?
    I have a grinder and sausage stuffing tube for my Kitchen Aid mixer. It
    has worked well for sausage making.

    I make chopped liver with my grinder, so I thought it might have worked.

    Try using the Kitchenaid with the bowl and bread paddle to emulsify the
    meat after you grind it with a fine plate. You'll probably need to add
    a little ice water to get it to mix properly. It should look sort of
    like bubblegum.

    Actually if you grind the meat first a good processor should emulsify it.

    The Bufallo will do the job. Those I remember from some
    years ago were not only expensive but dangerous.
