supper tonight

  1. I had, I guess you'd call it beef medalions, (3 1 inch thick slices of beef
    tenderloin, lightly seasoned and pounded a little to 3/4 inch thick) and
    asparagus. Both of these were quickly grilled. The asparagus was lightly
    oiled and salted prior to grilling.

    It was an excellent meal and quite fast to prepare and cook.

    Oiled and salted asparagus grilled quicky over a hot grill is my favorite
    way to have them. And who doesn't enjoy a good beef tenderloin?

    If I liked asparagus, that would sound very nice. It grows in my back
    yard, and I steam and sweat it for my wife.

    That is about a perfect meal. Although asparagus isn't my favorite, I
    would like it this way. A nice spring dinner.

  5. I picked up a special whole beef tenderloin for $5.99 lb.

    Cut it up into medalions and had the end piece for supper tonight with
    fries and beets!

    Pineapple upside down cake for dessert.

    Tonight, we're having tuna casserole. I am out of onions (how did
    that happen???), so I grabbed some frozen onions-and-peppers out of
    the freezer. Haven't ever had peppers in tuna casserole, but what
    the hell.

    I lightly pounded it to help rub in the seasoning and to make the
    meldalions slightly larger to grill up faster. I used my fingers to poke
    err pound it as the meat was so tender

    We had fried shrimp poboys and fried mushrooms...shrimp fried with
    zatarains fish fry on fresh french bread with lettuce, tomato, pickle,
    and the leftover sauce from the mushrooms (ketchup, mayo and horseradish)

    Heck, I wish I would have known you needed onions! Our neighbor came by
    with a sack of potatoes, ripe tomatoes, green tomatoes and onions. I've got
    more onions than I can eat.

    Try a bacon, lettuce, and fried green tomato sandwich sometime. (I've got a
    document at home named "things to do with green tomatoes." If I remember,
    I'll post some of those ideas here.)

    Does TFM® like liver? Liver & onions is a good way to use up onions. Potato
    & onion omelets are yummy; for that matter, you can make hash with potatoes,
    onions, and just about anything else. Ratatouille is a *wonderful* use of
    veggies -- and I think it's fairly low-carb, too.

    TFM® LOVES liver. He loves hearts, all kinds of organ meats. Liver and
    onions does sound like a good combo for him. Thanks for the idea.
