  1. As I can't always get fresh veg, would I be better off using frozen or
    tinned from a nutrition point of view?
    Also, which veg tends to be best, again from a nutritional point of view,
    when used for cooking?

    Frozen vegetables lose vitamins in processing but not as much as the
    canned ones.

    the most nutrition, but they're not available canned. Carrots are a
    good complement for vitamin A (carotene) intake. Use sweet potatoes
    instead of regular potatoes to get more vitamins. If one has to use
    canned vegetables consider sweet peas and carrots.

    Actually I misread your post as asking whether you should eat more
    vegetables if all you could get were frozen or canned. That's why i said
    yes.

    As to which vegetables, by far the most important criterion for nutrition is
    variety.
