How much do you use and for what reason. I use zero-float cleats and dial in 3 degrees on my Looks so my feet don't move on the pedal beds when grinding up climbs on the seat (or I know if they do). I found it a better combination than with cleats with 6 degress in-built (i.e less total float). Obviously this increases the chances of pulling a boot when sprinting. Just interested...

I use whatever comes with the new Ultegra pedals.
I have a theory 🙂........
When I had my first Looks in about 1993, my feet slid all over the place; so much so, that I had no confidence standing on the pedals, and I eventually got rid of them. The Ultegra pedals don't slip at all, even when I'm mashing and thrashing off the saddle like a freak, 🙂 so, the amount of float isn't a problem. It may be the plastic body cover of the Shimanos that reduces slip. I suspect the slippery surface of other pedals leads people to want to inhibit float.
Do your pedals have a slippery surface?
There are at least 3 guys in a regular group ride I do that can't ride off the saddle, even when they're under pressure, and 2 of them have older, Look pedals. I wonder if the slippery surface inhibits them.
