Ruth was kind enough to share her recipe for chili sauce when I was fine
tuning my own chili sauce recipe. The amounts will make 12 - 8 oz [250
ml] jars but the recipe can be reduced to make a couple of jars if you
don't want to can the jars. If not canning the chili sauce, pour into
jars and store in the fridge. My adjustments are in []. Enjoy 🙂
4 qt tomatoes [about 20 lg]*
1 onion [chopped]
2 sm green peppers [seeded and chopped]
1 lg stalk celery [sliced or halved and sliced]
Cook these ingredients [for about 10 min] then add:
2 1/2 tbsp coarse salt [pickling salt]
1 1/2 c white sugar
1 c vinegar
1/4 tsp ginerger [ground]
1/2 tsp ground cloves
3/4 tsp cinnamon
Mix well and cook until vegetable are soft. Pour hot chili into jars
and seal.**
My notes
* use meaty tomatoes such as romas, remove seeds and adjust to 4 qts or
desired amount depending on how much you are making.
** Ruth did not use a hot water bath but current canning practice is to
use a hwb for this recipe
I found the recipe as it is a little runny. It does have nice flavour.
