  1. Ruth was kind enough to share her recipe for chili sauce when I was fine
    tuning my own chili sauce recipe. The amounts will make 12 - 8 oz [250
    ml] jars but the recipe can be reduced to make a couple of jars if you
    don't want to can the jars. If not canning the chili sauce, pour into
    jars and store in the fridge. My adjustments are in []. Enjoy 🙂

    4 qt tomatoes [about 20 lg]*
    1 onion [chopped]
    2 sm green peppers [seeded and chopped]
    1 lg stalk celery [sliced or halved and sliced]

    Cook these ingredients [for about 10 min] then add:

    2 1/2 tbsp coarse salt [pickling salt]
    1 1/2 c white sugar
    1 c vinegar
    1/4 tsp ginerger [ground]
    1/2 tsp ground cloves
    3/4 tsp cinnamon

    Mix well and cook until vegetable are soft. Pour hot chili into jars
    and seal.**

    My notes
    * use meaty tomatoes such as romas, remove seeds and adjust to 4 qts or
    desired amount depending on how much you are making.
    ** Ruth did not use a hot water bath but current canning practice is to
    use a hwb for this recipe

    I found the recipe as it is a little runny. It does have nice flavour.

    I don't know why it's called "chili sauce", but that's what it is. Just
    like the stuff Heinz (and probably also Hunt's) makes. It's just an
    extra spicy ketchup.

    No, this is called Chili Sauce and has no chilis in it. The small green
    peppers are sweet peppers. I should have specified this. This is a
    very old, traditional sauce used as a condiment similar to salsa. It
    has a deep aromatic flavour. Unlike salsa it is not used as a dip. We
    love it served over mashed potatoes. You can also use the sauce as an
    ingredient for other dishes.

    OK, thanks. Still sounds like a good recipe.
    I imagien the Ginger and cloves gie it a mild kick along with a little
    warmth from the onions.

    A spicy ketchup sounds good though, still.

    I think the spicy ketchup is smooth in texture. The chili sauce is
    about the texture of chunky salsa. The colour is a deeper red almost
    rust when compared to tomato salsa. I suppose you could use a stick
    blender to smooth out the texture but I think the chunky texture is
    better. It's hard to explain the flavour. It's spicy but not hot spicy.
